Garlic Lime Salmon


1/2 cup vegetable oil
1 medium onion, diced
2 tbl. lime juice
1 tsp. grated lime peel
1 garlic clove, minced
2 (1.5 pound) salmon fillets
lime slices (optional)

In a jar with a tight-fitting lid, combine the first five ingredients ; shake well.

Broil salmon, skin side down, 4-6 in. 

From the heat for 20 minutes or until fish flakes easily with a fork, basting every 5 minutes with lime mixture. 

Garnish with lime slices if desired.
